For the plugins specifically, Have not listed the old `.2` version
as that does not include the full suite of plugins (missing hashicorp)

… docs to add ENV var option

There is a log message that says we can use `VAULT_TOKEN` if `hashicorp-key-management-token` is not provided, but wasn't part of the
documentation.

The example for the operator uses that approach. Updated to add policy and added examples how things will look like.
